Mendocino, California— Grape: 85% Viognier, 15% Sauvignon Blanc
Vineyard: Vigonier from Shannon Home Ranch in Clearlake Oaks, CA. Sauvignon Blanc from La Ribera Vineyard in Talmadge, Mendocino County, CA. Both vineyards are CCOF certified Organic.
Making of: the grapes were de-stemmed and spontaneously fermented on the skins for 6 days prior to pressing and finished fermentation in-tank. Aged in a stainless steel tank. Malo-latic fermentation started on its own in December and finished in mid January. Prior to bottling, the Sauvignon Blanc was blended into the Viognier to increase acidity, soften the palate and add dramatic flare to the aromatics. The wine was bottled on in February.
