Sicily, Italy— This is the ideal fish and sushi wine. Alessandro actually made this wine to have with fish. This wine can absolutely be enjoyed on its own and will give you layers of mineral and texture. Zesty and fresh with a hint of ginger and chamomile.
Note di Bianco is 100% Grillo coming out of Alcamo, Northwest Sicily. Alessandro Viola is a meticulous and greatly skilled winemaker and farmer. When asked why he makes natural wine, he answered, "In wine there is a perfect chemical balance, only nature can go that far, who are we to do better than nature?" What a beautiful way to sum it up.
