"This is the blend of all my most beautiful Gamay terroirs from the historic hillside of Boudes (in very steep slopes).
Basalt reigns supreme with different types of marls (mostly, they are blue).
4 weeks of whole-cluster maceration in large truncated wooden vats.
A few punchings on the feet (one to start the fermentation, one to consolidate the good kinetics
fermentation and one to extract the most beautiful elements from the grapes).
9 months of aging in old 300 l and 228 l barrels.”
