Hanoi, Vietnam— Like nothing else you’ve ever tried!!! Made in Hanoi, Vietnam, from yellow sticky rice that is hulled, milled, and unpolished, the rice is left out to ferment, and when it becomes a liquid, another fermention begins. The latter fermentation takes place in a mix of amphora, terracotta, and oak, then made sparkling via the Traditional Method. It's medium in body, oxidative with notes of bruised Granny Smith apples, green mango, chicken broth/soup, toasted cashews with medium acidity and a zingy, nutty finish.
