Andalusia, Spain -- A helluva wine at a helluva price. Palomino aged under a thin veil of flor for 15 months. Unfortified and en rama (raw/unfiltered). Mario Rovira is based out of Bierzo, but wanted to make a wine with grapes from his home region.
The grapes are grown in the classic Albariza soil (Tosca Cerrada) and this type is specifically called Basta is a little more crumbly when wet.
Salty, chalky, savory, mineral, grilled pineapple, grilled almond. This wine loves food--fish, or grilled veggies.
