Matassa Cuvée Marguerite is a natural white wine coupage of Small Grain Muscat, Alexandria Muscat, Macabeo and, depending on the vintage, a little Viognier. It is produced by Domaine Matassa.
Domaine Matassa is a winery in the south of France that has small plots of very old vineyards. It was founded in 2011, and its vineyards total 15 hectares and are cultivated according to the principles of biodynamics. In its production processes the winery uses very little sulphur and its wines do not involve auxiliary processing additives.
The soils of the vineyards for Matassa Cuvée Marguerite are composed of schists and marl. They are surrounded by scrubland and native vegetation. They face in several directions and their climate is influenced by the Mediterranean Sea and the Pyrenees. They are cultivated organically and biodynamically, and produce about 18 hectolitres per hectare. They are harvested by hand early in the morning into small 12 kg boxes so that the grapes arrive fresh and full in the winery.
Matassa Cuvée Marguerite is fermented with native yeasts in 500 litre barrels. The wine undergoes malolactic fermentation and ages for 10 to 12 months in the same barrels without batonnage being performed. In addition, very little sulphur is added during vinification.
