Angelo Paternò’s Sikele is 100% organically farmed Grecanico Dorato from Sicily. Influenced by Cornelissen, the winemakers have adhered to a low interventionist and organic approach. Large concrete tanks are used for fermentation and elevage, helping to control fermentation temperatures in the warm Mediterranean climate and preserve the fruit. This bright skin contact has a slight note of sourdough with lots of stone fruit. Think fresh bread with a brandied apricot jam.
