Richard Stávek is one of the originators of natural Moravian wine. This is a unique bottling where he adds local honey (from the same bees that pollinate his vines) to the Muscat to help the fermentation finish dry. Grapes ferment whole cluster with gentle foot-trodding. The wine has a crazy disconnect between the floral, nectar on the nose and the dry, spicey, apricot palate. Totally distinct with layers of clove and honey.
