Catalunya, Spain — The Dibon Cava is a blend of biodynamically farmed Macabeo, Parellada, and Xarel·lo from Penedes. The three grape varieties are sorted and fermented separately. The second fermentation takes place in the bottle over two years. Pale yellow in color with very fine bubbles, this wine is refreshing and citrusy with notes of freshly baked bread on the nose.
