Emilia-Romagna, Italy— Antonella and Marco founded Folicello winery in 1980 with hopes of making a ‘wholesome glass of wine’ to share with their friends and family. Nearly 50 years later, they continue to produce wines (and jams from excess grapes!) on a small estate in the heart of Emilia Romagna, Italy. Certified organic, the grower-producer pair has a low-intervention approach in both the vineyard and cellar, using indigenous yeasts with no added sulfites. The limited edition Bianco Pet Nat is a blend of 90% Pignoletto and 10% Moscato which receives a short maceration of two days, resulting in a slight haziness and a medium light body. An aromatic nose of orchard fruit is met by a palate bursting with fresh ripe peach and baking spice. Try pairing alongside a chicken tagine with almonds and apricots or a sumac whole roasted cauliflower and couscous Low S02.
