Notes from Importer: 100% Pignoletto, spontaneous fermentation and aging in concrete tanks. Maceration can vary from hours to days. Aged six months on the lees. A chilled grape must from the same year is then added to the wine before bottling. No disgorgement so you can leave the wine on the lees as long as you like!
