Notes of chamomile, lemon, honey, baked apple, stonefruit, and beeswax. Bright and refreshing with a stony minerality. Hand-harvested, organic Chenin, pressed whole cluster into steel for spontaneous fermentation and then aged in neutral oak for five months with minimal bâttonage. Unfined, unfiltered, trace sulfur added.
The Clarksburg Chenin is the first site Megan ever worked with for her own project and she helped inspire him to convert to Organic farming. The vineyard has hot days and cool nights thus the wine retains a balanced acidity even though it is from the Central Valley.
