Chardonnay from Languedoc, France. Full-bodied and fruit-forward with a grassy character, notes of lemon and grapefruit on the finish.
Grapes are hand harvested, and fermented traditionally with indigenous yeast. The wine spends 12 months of elevage in 400 liter wooden tanks and is bottled unfined, unfiltered, and with a small addition of sulfur.
Jean- Marie Rimbert purchases these grapes from a neighbor who is a former apprentice of his, who works his soil with respect to the environment.
