Sarnin-Berrux is led by two men based out of Saint-Roman. Seeking to source grapes from organic growers is often a sisyphean effort in Burgundy, but the pair stick with their principles and buy organic fruit.
This wine is made using “the other grape of Burgundy,” Aligote, and it offers lively acid, bright lemon curd, and excellent minerals. The Aligote is sourced from Chassagne.
Minimal sulfur is added at bottling to provide a safe transport from France. The sulfur they use is not synthetic, but rather volcanic sulfur converted to its liquid form using a high tech machine. It is cool to see technology assist in the making of clean and precise natural wine.
