Sébastien Riffault's Sancerre Auksinis is 100% biodynamically farmed Sauvignon Blanc from Loire. Spontaneous fermentation in stainless steel with indigenous yeasts, malolactic fermentation. Aged in old barrels. No fining, filtering or S02 added. Riffault's wines stand out in a region where conventional farming reigns. He also leaves his grapes on the vines much longer than is usual, allowing them to become very ripe, and often affected by botrytis. This makes for a uniquely rich interpretation of the varietal, all at once honeyed and herbal.
