Adega Entre os Ríos’ Komokabra’s is 100% organically farmed Albarino from Galicia in Spain. Grapes are macerated and lightly pressed, and then fermented in stainless steel with wild yeasts. Coupage of two stainless steel tanks, one of them with malolactic fermentation and lees worked, the other one no malolactic and no lees. Bottled at the end of August 2018 and 2 months bottle aging before market release. This is a crunchy, fruit & citrus forward white, best paired with cheesy or creamy dishes that need a little brightening up.
