Neither having family roots in \u003c\/span\u003e\u003cspan\u003eprofessional viticulture (a rare occurence in the region), the couple began with 1.5 hectares of vines \u003c\/span\u003e\u003cspan\u003eoriginally belonging to André’s father, a shoemaker by trade. They slowly expanded over time, \u003c\/span\u003e\u003cspan\u003eacquiring “less desirable” plots surrounding the village—on the steep schist slopes of the Kastelberg \u003c\/span\u003e\u003cspan\u003eor bordering the vast Vosges forests—progressing to 10 hectares situated on 9 distinct micro-\u003c\/span\u003e\u003cspan\u003eterroirs.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIn addition to being certified organic since 1998, the domain is founded on André and Anna’s unique \u003c\/span\u003e\u003cspan\u003epassion for agroecology—a focus which has continuously inspired distinct innovations in the \u003c\/span\u003e\u003cspan\u003evineyards. Amongst the notable presence (and preservation) of natural flora and fauna and \u003c\/span\u003e\u003cspan\u003esprinkling of planted fruit trees, the vines of certain plots grow on large lyre-shaped posts—\u003c\/span\u003e\u003cspan\u003eintroduced by André to increase the foliage surface and thus the reserves of the plant, similar to that \u003c\/span\u003e\u003cspan\u003eof a tree. In further strides towards ultimate biodiversity, a herd of twelve sheep maintains a constant \u003c\/span\u003e\u003cspan\u003epresence in the vines during the winter months, eliminating weeds and providing natural fertilization \u003c\/span\u003e\u003cspan\u003efor the soil—an initiative of their son, Yann.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIn 2007, following the completion of a viticulture and oenology degree, Yann Durrmann joined his \u003c\/span\u003e\u003cspan\u003eparents at the domain, providing the decisive link between the vineyards and the cellar. With a long-\u003c\/span\u003e\u003cspan\u003estanding interest in non-additive winemaking (think Frick) and tendance towards perfectionism, \u003c\/span\u003e\u003cspan\u003eYann introduced a natural methodology to the vinifications, eliminating the use of all oenological \u003c\/span\u003e\u003cspan\u003eproducts. Bunches for all cuvées are destemmed, with the whites undergoing a brief overnight \u003c\/span\u003e\u003cspan\u003epellicular maceration before pressing in order to accentuate yeast activity and favor fermentation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIn various above-ground cellars located on hidden side streets surrounding the main cave, \u003c\/span\u003e\u003cspan\u003evinifications take place in Alsatian foudre and stainless steel.
