Kochi, Japan — Made using local Matsuyama Mii rice milled down to 60%, from a precise and well-regarded producer located in the remote area of Kochi, regarded for its unique style of sake, Bijofu is a pleasantly approachable, well-rounded, and subtle sake with a silky texture, notes of melon and herbs, and mildly savory finish. Best served with a slight chill as a perfect pairing for fatty foods like portabello mushrooms or tuna.
Tokubetsu Junmai refers to a special type of Junmai, or sake made only from rice without any additives, in this case using a special kind of sake rice milled down more than on average for a softer and more subtle expression.
