This new Luar Rosa was 100% produced in “talhas” (amphoras). The two grape varietals, Azal and Espadeiro, are quite unique, rare and only found in the Vinho Verde region of Portugal . \u003cbr\u003eUpon arrival at the cellar, the grapes were destemmed and moved to the “talhas” (amphora). At this point 500gm of ground chestnut flower was added and immediately foot stomped to create enough juice to cover the mass. \u003cbr\u003eThese grapes were kept with pellicular maceration for 12 days at 14ºC, pressed and returned to the “talhas” for the fermentation to finish. Once completed the fermentation, the amphora was sealed with plastic wrap and kept until the middle of December.
