Cyrille spent most of his professional career as a math teacher in Paris, but he always dreamed of having his own vineyard. So, early in his career, he purchased a run-down home as an investment. After fixing it up, he was able to sell the home, retire and buy some 8 hectares in the Cheverny area.
A damn good alternative to Champagne. Citrus, herbs, hazlenut and brioche. Mineral and slightly oxidative.
Mostly Chardonnay with some Menu Pineau, Pinot Noir, and Cab. Franc methode champanoise. 24 months on the fine lees before disgorgement, no dosage, 2014 vintage!
