En Cavale is a brilliant collaboration between Wolfgang Weber and Chad Hinds (Methode Sauvage). This one is comprised of carbonic Zinfandel from a vineyard nestled into the idyllic foothills of the Vaca Mountains. The soil is a buildup of volcanic matter, clay, and serpentine. After one week of carbonic it is followed by another of gentle food treading before being pressed into neutral oak.
Dried flowers, dark berries and black pepper. Light, fresh, and definitely chillable.
Low sulfur at bottling.
