A rounder Sauvignon Blanc that showcases notes of passion fruit and citrus. Silky texture makes way to tastes of honey and dancing peach. Organically grown on the sandy shores of the Sacramento Delta where Wolfgang is able to sail to the vineyard. En Cavale is a collaboration between Chad Hines of Methode Sauvage/ Iruai and Wolfgang Weber (wine writer/ Selection Massale).
The grapes are hand harvested, foot stomped and 60% macerates on the skins for 3 weeks. The two portions are blended for elevage in Acacia barrels for 4 months and then bottled unfined/unfiltered low SO2. 200 cases produced.
