From abandoned orchards with a blend of young and old. Most trees originally planted back in the 1950s. The older wild apple trees add lots of tannins and complexity, whereas the younger trees add energy and juiciness.
90% Ingrid-Marie, Ribston and wild heirloom variety apples; the 2020 vintage also contains 5% pears and 5% small yellow plums. Cider made using short skin-maceration, then co-fermented with indigenous yeast. Unfiltered, unfined and without additives.
Personality: complex and powerful thanks to the wild old apples – a true Alice in fruit wonderland!
