A Chablis with great tension; the rich texture from the 12 months of lees aging play with the flinty mineral freshness from the terroir and 12 months in steel. Lemon, nectarine, honey blossom, with a soft nutty finish. Wild ferment, lightly fined with bentonite, lightly filtered, and low SO2.
Guillaume now runs the family estate and they are one of the few who make organic wine in Chablis. Not only do they farm organically, but they have always farmed this way, since 1955. They incorporate biodiversity into their estate, going beyond the basic organic certification.
