Heiwa Brewery's Kid is a relatively new sake brand, beginning production about 10 years ago, and it's production staff is relatively young as well, focusing on producing a more modern style of sake. As such, Heiwa Kid Junmai is dry and approachable in a soft and subtle style with a silky mouthfeel, balanced acidity, and note of umami on the finish.
As a modern brewery, Heiwa is more egalitarian in its approach, integrating education as a part of production and designating tanks for its staff to experiment with making their own sake.
