Auvergne, France— Henri Chauvet has been making amazing wines in Auvergne since moving there in 2021. We’re excited to offer some of his wines in the shop once again!
From Henri—
"A plot composed mainly of old Gamays from Auvergne and Gamays Beaujolais. We can also find some other varieties of gamay in limited quantities.
A dominant of red clay very rich in iron oxide with a flush limestone block. 12 to 15 days of whole bunch maceration in large stainless steel vats. Only pumping over the bucket to wet the hat.
I sometimes squeeze out a little free-run juice after a few days of fermentation to keep the shine of the fruit.”
