Alsace, France— Produced by the Pépin collective, ‘That Juice’ is a Vin de France drawn from organically farmed parcels on the upper Rhine plain of Alsace, where loess and alluvial soils over limestone give Gewurztraminer a lifted, spice-driven, almost saline expression. Fermented spontaneously on native yeasts and bottled unfined and unfiltered, it sits squarely in the natural-wine realm: floral without sweetness, textural without weight, and buzzing with fresh ginger, orange blossom, lychee skin, and a subtle bitter phenolic snap. Serve it just cool—not ice cold—with dishes that appreciate perfume and grip: chili-crisp noodles, Korean fried chicken, washed-rind cheeses, roasted squash with herbs, or winter stews that benefit from aromatic lift. Hues is the brain-child of Marquis Williams, conceived as an ongoing collaboration with a “quiet” natural grower-winemaker in Alsace who prefers to stay off-label, in the classic Paris–Brooklyn natural-wine tradition. Each release is small, eagerly anticipated, and built around the idea of reframing Alsace aromatics through a minimal-intervention lens: organic farming, ambient ferments, nothing added, nothing taken away. The project leans into color, texture, and energy rather than appellation prestige—making That Juice a culty, sommelier-favorite kind of bottle: playful on the surface, but deeply terroir-driven and expressive of its place and process.
