100% Organic production protected by the local Basque designation "Denomination of Origin Euskal Sagardoa."
Harvested from 6 different varieties of native Basque apples: Txalaka, Mozolo, Gazi, Errezil, Gozo, and Moko which all grow in very close proximity to the sea.
Fermented with native yeasts in stainless steel tanks for a few short months and bottled unfined, unfiltered, no added sugars, and only 10ppm of SO2 at bottling.
This is the cousin sidra producer to our new Txakoli producer Basaurresti "Lahu" both made by Jon Oliden but here also with friend and farmer, Gotzon. Annual production is 250,000 bottles.
