Yuki Nakano transitioned from working as a sommelier in Kyoto to producing wine in New Zealand. His focus is making wine to pair with Japanese cuisine, an area that he argues is lacking.
On Nelson, the picturesque northern tip of New Zealand's South Island Yuki manages 3 hectares of vines. He also buys small quantities of fruit from like-minded friends. His annual production is only 8,000 bottles.
The 2020 Casablanca is 100% Pinot Noir (75% clone 115, 25% clone 667), destemmed, crushed, one-month maceration and spontaneous fermentation. The wine is raised in clay amphora for 9 months. Zero/Zero. Coca powder, spice, clove and red/black fruit.
