Greenport, New York— “The liquid starts with the production team heading down to Briermere Farms to cut and de-stem the fruit off the branches into buckets - collecting as much perfect fruit as possible. We then take the fruit back to the distillery and add a little sugar + water and start the ferment. The fermentation is then arrested with spirits - for this we used a freak of nature oolong distillate & yarrow flower distillate which was foraged for in Vermont. The liquid is then proofed down to 23% & refined by Leslie & Scott before bottling. A cool 8 month process - but way worth it.
What is this 'Freak of Nature Oolong' you may ask. Besides being $200/lb its definitely the most insane tea i've ever had. I'm pretty jacked up on a cup writing this so sorry for rambling.
