Mezcal Derrumbes is an independent bottler of a variety of mezcals made from different agave types and from different regions of Mexico, mainly small producers that haven’t been exported before. Zacatecas is made from azul agave, the kind used in tequila, that is pit roasted, tahona milled, fermented in stainless steel vats, and distilled in copper stills. A soft, fresh, mildly grassy, and savory mezcal that can work to bridge the tequila-mezcal divide.
