Trepat grown organically on calcareous clay soils in the Baix Penedès. Harvested by hand, destemmed, 3 day maceration on the skins, spontaneous fermentation in stainless steel with indigenous yeasts followed by 8 months in stainless steel, 5 months in bottle. No fining, filtering, or SO2 of any kind. A bit more grippy and textured than some of the more "gluggable" styles, which shows the full range of what Massimo and Antonella are making with these local varieties.
