Coming out of Moravia, we get a delicious wine/cider/piquette. Utopia collaborated with Milan Nestarec, using the pomace of his Cabernet Franc. The pomace gives the fully dry cider enough sugar to prompt a secondary fermentation trapping the bubbles in the bottle and resulting in a dry, slightly sparkling apple and grape beverage.

Utopia found an extremely old farm, some structures on the property date back to 1490. The apples come from older trees, around 80 years old. They make all spontaneous ferment ciders with wild yeast, which is very hard to do!
