Coming out of Moravia, we get a delicious wine/cider/piquette. Utopia collaborated with Milan Nestarec, and uses the pomace of his Welschriesling and Rheinriesling. Macerating on the skins and stems for 7 days gives the fully fermented and matured dry cider enough sugar to prompt a secondary fermentation. The liquid is then bottled, trapping the remaining CO2.

Utopia found an extremely old farm, some parts of the property date back to 1490. The apples come from older trees, around 80 years old. They make spontaneous fermented ciders with wild yeast, which is very hard to do!
