Val de Mer is the second project from the renowned Chablis producer, Patrick Piuze and is co-owned with Moutard-Diligent. Hand-harvested Pinot Noir from clay, limestone soil very close to Chablis. Spontaneous ferment in steel, bottled in the spring for second fermentation and then rests on the lees for 13 months. Disgorged, no dosage, low SO2.
This is a firm and lively Champagne method rosé sparkler, with bright cherries, raspberry and lots of pink grapefruit acidity. Crisp and lip-smacking with a fine mousse.
