Reserve sparkling rosé wine made with 100% Monastrell, in the ancestral method. Hand harvested, slow fermentation in the bottle for 30 months, with native yeasts. Produced on the farm itself and aged in an underground cellar in a cool, consistent temperature. Grown and produced completely zero/zero - no filtering, fining, or SO2 of any kind. Annual production is around 1,200 bottles.
