Soft and bitter red fruit with a little earthy element.
The grapes are hand harvest off a few micro-sites of no more than three hectares. De-stemmed, natural fermentation in stainless vats of 300L. Very low volume pump-overs for delicate extraction. Lightly fined and filtered with SO2 additions appropriate for the format.
